What are some really good pizza recipes (toppings)?

I have a great pizza crust recipe, so I don't need any pizza crust recipes. I am interested in what you put on top of your pizza? and in what order? and what are your favorite toppings and combinations? Okay, here is my crust recipe. It makes crust for 2-3 pizzas. 1 1/8 cup warm water, disolve 1 tsp - 1 tbls sugar in it and add 1 1/2 teaspoons yeast. Let it sit for at LEAST 5 minutes, maybe 10. Add 3 cups plus 2 tablespoons bread flour, 1 1/2 teaspoons Italian Seasoning, crushed between your fingers as you add it and 1 1/2 teaspoons Sea Salt. I put mine in my bread machine on the dough cycle. Let it sit a little bit when done, than move it to a covered lightly oiled bowl - let it rise again. I cook mine my a cast iron skillet. Brush the skillet with oil and dust with garlic powder and pepper ( I have a six pepper blend I use). Use an amount of dough based on your crust preference - spread out with your hands and fingures not quite all the way to the end. Let rise again for 20-30 minutes, now spead out to the edge and make a crust. Top with your favorite toppings - bake at 400-450 (preheated) degrees for 13-15 minutes on the middle shelf. Turn to broil for 2 minutes

Buffalo chicken pizza. * Pam, non-stick spray * One package Pillsbury refrigerated pizza crust * Olive oil * 3/4 cup bleu cheese dressing (Ken's brand is the closest you can get to Buffalo bleu cheese dressing, outside of the Buffalo area) * Three chicken breasts, cooked and shredded * ½ cup hot sauce, or to taste (preferably Franks Red Hot) * 1/8 cup melted butter, or to taste * ¼ cup chopped celery (optional) * 1/2 cup mozzarella cheese 1. Preheat oven to 350° 2. Combine hot sauce with melted butter and mix into chicken. (Note: you can adjust the proportions of butter to hot sauce depending on your taste) Set aside. 3. Spray a large cookie tray with Pam 4. Open the pizza dough and spread evenly onto the cookie tray 5. Spread a very thin layer of olive oil over the pizza dough 6. Spread the bleu cheese evenly over the pizza dough 7. Spread the chicken mixture evenly over the bleu cheese 8. Sprinkle the chopped celery over the chicken mixture 9. Top with mozzarella cheese 10.   6. my favorite is a garlic alfredo sauce, sundried tomatoes, roma tomatoes, mushrooms, basil, spinach, chicken, parmesan cheese, calamata olives, and fresh mozzerella cheese
  7. I do this cool take on pizza for my family. Instead of doing an actual pizza, I make pizza pockets. I just roll out the dough into a 6 inch diameter circle (or squares like my daughter prefers) and then add my sauce and cheese making sure to leave an inch around each side to secure it closed. Then it's really up to each family member which toppings go it it. My daughter likes pineapple and bacon (more flavorful than ham and pineapple), my husband likes pepperoni and bacon, and I, myself prefer ground beef, cheddar cheese, bacon, and mozzarella cheese (like a bacon cheeseburger pizza). Then after adding toppings (carefully to not over fill) I just fold it in half on itself, seal the edges (sometimes it's necessary to roll them slightly), and brush with egg yoke for a nice glossy sheen. Only bake them until the crust turns slightly golden or they get too crunchy on the bottoms. Now I often times when I make an actual pizza, do a white pizza. It's just rolling out the dough to whatever size and thickness you like, then swapping out pizza sauce for alfredo sauce mixed with half a SMALL container ricotta cheese, half a small container of cottage cheese, and like a 1/4 cup of Parmesan cheese. Then for toppings I use lots of Italian blend (some stores call it pizza blend) cheese, grilled chicken breast seasoned lightly with Italian herbs, and sometimes a little bit of broccoli (sounds gross, but it's good if you are a broccoli fan). Now, in the mornings I use a great recipe that I have perfected over the years. I start with a pre-made WHOLE WHEAT crust and use country gravy (sausage flavored or non, makes no difference) as the sauce. I scramble two eggs and cook until they're set, use a mixture of mozz and cheddar cheeses, and use whatever kind of breakfast meat I have available (sausage is always good, bacon of course is a yummy choice, or ham steak cut into small cubes). This is a favorite on weekends at my house, it's quick and easy, and really filling. Just be sure you don't use too many eggs or the pizza gets heavy and all the toppings slip off the crust when you bite it. Oh yeah, one more...I do a great steakhouse philly pizza. Use a regular crust, sautee some green peppers and onions (I dice mine up really small and call them pizza sprinkles so the kids will eat them, but I, personally, much prefer them larger), the use a general white sauce (recipe found in any cook book) and top with mozzarella, browned fajita-cut steak and that's it! I like to leave this one in the oven a little longer so the cheese gets all brown and bubbly. Yum. All varieties go in until desired browning is reached and always at an oven temp of 450-475. Except the breakfast pizza which can in at 425 so the eggs don't burn. Enjoy :) I would also love your dough recipe if you want to share :) That's the only thing I haven't tried to do myself yet.
